Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

All I could think of while drinking this was Monty Python and the Holy Grail. So I think I was laughing most of the time while trying to rate this one. Dark, deep bron color, with just a little tiny head that fades into a creamy rim. A strong medicinal aroma, alchohol and dark fruits. The texture is almost oily and tannic, strange mouthfeel. Some bread, roasted malts and a strange fruit flavor I am assuming is elderberries. This just kind of is what it is, not alot happening with this beer but worth trying.

11.2oz. bottle. Dark brown, nearly black with a medium sized tan head that quickly dissipated. Mild aroma of roasted malts and fruit(I have no idea what elderberries smell or taste like). Berry flavor comes out more in the flavor with the roasted malts in the background. Bitter aftertaste.

Pours black, when tilted dark red/brown. When coaxed vigorously it has a very small head that dissipates quickly. Nose is pleasantly musty with a hint of malt and elderberry. Lively on the palate at first with no distinct taste immediately. Charred malt creeps in followed by a subtle elderberry hoppiness. Its a strange combination that really works for me. Not a robust ale by any means, but very enjoyable none the less.

Immediate aroma of elderberry wine, could also be mistaken for blackberry. Mild herbal component and some smoky bittersweet dark malts reveals the beery nature of the drink. Silky soft palate as advertised. Flavor is of light roast, lavender or soft floral herbs. A light tannic bite skirts the sides of the mouth. Light bodied. Finish is borderline empty. Lingering aftertaste has an herbal bitterness somewhere less than appealing. Semi-dry on the whole. Very dark brown, nearly opaque, smallish head fades quickly.

Bottled, best before 12/06. Pours a super deep ruby color. Minimal head. Sweet, smokey aroma. Some red wine type aromas as well. Flavor is an intersting smoke flavor that is complimented by the flavor of berries. Finish is roasted maltiness. Very enjoyable brew.

Bottle. Near black with a large tan head. Aroma of roasted malts and chocolate. Alot more fruit in the aroma; can I taste elderberries? Possibly. Sweet and malty, slightly smokey with some licorice. Fruity aftertaste. Nice fullish mouthfeel. Very good.

A crisp meduium bodied ale, with a sweet initial flavor that relaxes into a calm but flavorful ale.

Pours a deep dark ruby/black. Aromas of dark berries/wood and a hint of chocolate. Flavor of semi-sweet malts and mellow berry taste. I was really surprised by the overall flavor of this beer, excellent.
