Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Pours black with dark head. Moderate aroma with hints of berries- sweet smelling. Tasted earthy, with vegetable and fruit flavors. Finished mildly bitter. Palate was appealing with lively carbonation and alcoholic texture. Interesting history behind the beer recipe.

Name? Anyway, what to expect from such a beer regarded as an elderberry black ale, is not something i can quite grasp at present. The beer: Pours darker than expected being near black with a nice mocha head. Aroma wooo infinitly different from almost anythign iv ever had before. Mint, bubblegum, coffee, smoked ham..gee this could go on. Taste well i tasted it to cold and left it to warm, lightly bitter coffee going into mint choc-chip ice cream with molasses and port. ehhh i think this might be the wierdest beer iv ever had, but heeps of goodness alround!

Aroma is unmistakably berry fruit immediately after pouring. Tastes like almost like a strong stout but with a much liter easy finish.

Bottle. Pours black with a dark brown head. Very malty sweet aroma, with hints of coffee. Roasted carmel and coffe with malts kind of dissapears in the after taste with a late malty sweetness. Not bad

Refined dark fruity flavor and pleasant smooth, roasty, oaty graininess; a hint of nutmeg, and a nice oily smooth palate; not overy fruity or spiced; very good, and it cured my sciatica.

11.2 oz. bottle. Best before end: 04/06. A VERY dark mahogany pour with virtually no head. Roasty aroma that features some malts, chocolate, coffee and dark berries. Sweet, malty body that’s a little roasty. Some dark berries are present throughout. Decent body. A little grainy and oaty. Almost stout-ish. A pleasant surprise.

Burned bacon aroma. Black colour with off white head. Tastes of stout and dish water detergent. A realy off putting combination. Artifical and strange. An experiment gone completely wrong?

Pours a jet black color with a small amount of quickly dissapating whitish head. Very nice coffee, roasted sweet aroma. Flavor is bittersweet, jamish, coffee with a dry finish. Overall, definitely my favorite of the scotish ales set.
