Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Bottle from Peckhams, Glasgow. Dark chestnut with reddish hints and no head. Sweetish aroma, a bit like a milk stout with chocolate, toffee and some prunes. Flavour was had some sweet chocolate and oats to start, before large amounts of hedgerow fruit, herbs and a decent dry finish. Excellent.

Pours dark brown with a small creamy tan head. Roasty aroma, raisins and dark fruits.Taste is semi sweet, nice soft mouthfeel, hints of anis in the long aftertaste.

Pours a dark chestnut to mahogany brown color with a frothy, slowly fleeting head of grayish khaki foam. Minimal spotting dots the glass. The aroma is nice, showing notes of milk chocolate, dried caramel, and creamy lactose, with and overtone of dark berries and fragrant wildflowers. There is a very faint hint of smoky molasses, as well as some very soft anise. Flavors follow suit, drinking like a lactic schwarzbier up front, chocolaty and creamy, with a slightly tart, dark, fruity twang on the back end. The finish also shows a light, floral, somewhat grassy hop finish, with just a trace of mint. Medium bodied, even keeled, and easy drinking, the palate picks up significant smoothness from the oats. Pretty nice stuff. It exceeded expectations, for sure.

Dark brown with a tan head, aroma reminds me of a belgian dubbel, raisins, currants, plum. Initial taste of traditional stout, then incredible fruit flavors. Very nice mouthfeel, aftertaste is lingering and pleasant. Overall, excellent beer, didn’t know what I was getting into, but loved it.

11.2oz bottle from a Heather Ale mix sampler box. This one was a huge surprise. Did not expect to like an elderberry beer. Not even sure what an elderberry is or if I even tasted it in this beer. The flavors are more malt, currant, plum, oatmeal, and chocolate. Very interesting. And good. Don’t be afraid to try this.

Bottle: Near black with a ruby hue in the light and a light khaki head. Aroma is light roast, vanilla, plum, elderberry/currant notes. Velvety with mild carbonation. Flavors encompass currant, tobacco, smooth mild roast/ dark chocolate, black malt, some subtle spice when it warms (mint/ginger?). Dry throughout and very subtle. A nice Traditional Ale.

27.03.2009, 0,33l Bottle. The colour is dark brown/black. Head is brown and 2-3 mm. Aroma is roasted malt and berries/fruit. There is also some spiesy flavours and maybe some smoke.
