Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

This is really very good. Dark smoky elderberry flavours mask the strength. The mouth feel is very soft with chalky hints. The finish is mellow, slightly sweet with hints of elderberry. I’ll say it again, this is really very good.

bottle, pours black with a thin tan head. Light fruity aroma of cherry and plum. Dark malt, bakers chocolate, with a spiced finish that lingers. Carbonation is moderate to high and makes the mouth lively. Easy drinker, with tons of good dark flavors going on.

Apperance almost black. Aroma and taste of black licorice and a small touch of fruits.

Bottle from Chevy Chase Wine, D.C. Intriguing enough to take a flier on this one. A moderately well carbonated ale, dark brown in color and with a lively, crisp head. Faint roasted malts in the aroma along with a trace of tartness. The body is medium, prickly mouthfeel from the carbonation. The dry and astringent flavors of the dark berry seem to complement the understated roasting a bit. Nothing to write home about but a decent beer.

Interesting, very dark fruityness, I thought it would be more fruity (bad), but was pleasantly supirsed. It had a certain roastyness to it, which was complimented by a musty fruitiness. Overall it was okay.

Pours a dark red with a thick and creamy tan head. Same floral/peat aroma as their other beers. Roasted oat malt up front with a fruity middle then sort of a mix of the two on the finish. Got really excited when I found the oat flavor than was pretty well turned off after that. Roasted and fruity don’t mix with my palate I guess. Decent lacing.

Bottle. This a dark brown, almost black beer with a healthy grey brown head. There is plenty of licorice in the aroma, some coffee beans, wood, earth, some fruit: maybe raisin. The flavour tastes well roasted with plenty of coffee, some black berry, bread, water. The mouthfeel is pretty light and a bit on the watery side.

bottled, pours deep black with very small brown head and a lot of carbonation...cola like, roasted malt aroma with light hop background, very slight sweet malt up front with heavy roasted remaining on palate, not as heavy mouth feel as expected.
