Commercial Description:
Baltus, a hybrid style, is a top-fermented beer made with English floor malts, malted wheat and noble hops. A classic European yeast strain with a subtle yet discernable estery profile is employed. A warmer fermentation, followed by a period of cold conditioning serves to develop and refine this complex beer.

Dark brown with tan head & lacing. The aroma is bready with other very dark fruits & some roast along with a dark brown sugar. The flavor is full of fig, alcohol, some hops & some rye. Finishes malty & grainy, very strong notes here. Good.

Bottle, 04.26.04. Pours a middling brown, no head, no lace. Aromas are sour apple, green wood, something sweet (some kind of jam?). Flavors are all over the place...at first I get unripe plums, a sweet but sour fruitiness; in the middle, more sourness, more unripe fruits but a lingering plastic quality like the smell of packing tape (really); as the finish comes, the sourness becomes more tart, though this beer never gets bitter, and a deeper sweetness emerges that reminds of old fashioned hard candy. Some light molasses also comes through in the finish, as well as something that reminds me of young port. In all, this is my second time sampling O.V.S. and although it is unusual, I think something about it is really growing on me. I just can’t decide if the beer is muddled or complex; I’ll cellar a couple to see what happens to the sweet/sour qualities.

After nearly a year, the beer has mellowed considerably into something totally different, more complex, and fabulous. Strong tobacco notes have developed across the palate and nose, along with a leathery must. The sourness is all but gone, as well as the tart fruitiness; in place, a rum and apple soaked raisin quality has moved in. Tobacco, leather, and raisin. The sweetness has been allowed to emerge nicely, unencumbered by acidity, not so sweet as to be cloying. Layer after layer of flavor. Well done! If I knew it would turn out this good I’d have cellared more.
At this point, I’d score it around a 4.2, but I’m averaging the two scores to just bump it to 4.0, adding a point for aroma and one for overall. Original score was 7,3,9,4,14

I learned OVS stands for our very special (ale) and yeah it's pretty good. Aroma is sweet like maple syrup/ candy corn with caramel overtones. Tsted of spice/nutty with some alcohol on the tongue and some hoppiness at the end. Had almost no head at all, and poured this orange brown umber color. Overall I got a sweet/ nutty flavoring with some warmth at the end but not overpoweringly so.

Bright red/copper/brown body - clear and topped with a ring of lace. Sweet malt/fruit/sugar/toffee aroma. Taste is a stream of sugar down the center of my tongue, caramel, spices and smoke along the sides; hints of chocolate and plum. Finish is warm and sticky sweet

Pours a dark ruby with a thick off-white head. Sweet fruity and sugary aroma. Dark fruits, brown sugar, caramel, and raisins on the tongue. Slight bitter finish. Not the greatest beer in its style, but it's quite drinkable.

Deep amber/ruby in color with a small white head.Aroma of dark fruit and chocolate. Flavor is of sweet/sour fruit,malt,with a lingering bitterness in the finish.

Murky dark ruby with brown hues. Small fine particled light tan head. Caramel spicy aroma. Licorice, leather, and, some sour earthiness. The flavor is more sour and not as complex. Fizzy carbonation with a watery body. Ok but not outstanding.

I really enjoyed this beer. It has a spicy, maybe sour, flavor at first but melds into a maltier one soon after.
