Commercial Description:
A biere de garde or farmhouse beer. It's brewed exclusively with French pale malt and German hops. A long boil develops a deep amber color and malty complexity. A small amount of black pepper in the boil contributes a subtle spiciness. The beer is fermented with a wonderful monastic lager yeast and the finished beer is bottled-conditioned and packaged in 750 ml. corked bottles. The bottle wears a label of beaux art. It features an image of an abstract painting by Canadian artist: Christine Haley.

Couleur brune tirant vers l’orange, apparence opaque parsemée d’une mousse blanche concassée adhérant bien à la paroi du verre. Arômes pleinement maltés, caramel et sucre candi en abondant sous une solide empreinte épicée, style poivré. Flaveurs de pain grillé, de caramel, de fruits rouges et de sucre candi nous conduisant jusqu’à une finale anisée exposant une touche d’alcool. Corps d’épaisseur moyenne, carbonatation piquante semblant un peu trop agressive pour accompagner la douceur sucrée des malts. Une interprétation intéressante du style. Bouteille 750ml, Half Time, Septembre 2005.

You can take the fly out Texas but you can’t take the Texas outta fly - meaning that while this has funk that I love, it veers closer to tart and to better describe I am unable. Lovely aroma and truly delicious beer. I might have held onto this for a while, but as I was boarding the plane upon departing NY the 40 pound plus carry on I was wielding swung forward as a person in front of me stopped abruptly causing my bag to hit the plane. I felt a brief spray through the bag, but it was raining and I also had a growler in a leaky cooler. When I got home and unpacked there was a faint smell of beer, but for the fist time in my life it wasn’t foul after sitting there for a day. This bottle had it’s cap knocked so that it was crimped in a weird way, but it hadn’t gone flat. Amazing. Nor had it spilled, just a brief spray. Now I want more.

Bottled at State College 8th Annual Festival. Light malty pepper aroma. Floral and grassy, bit of musk. It follows the bière de garde style and reminds me of the aromas of some decent French beers. Light gold-amber with mild haze, foamy lacing head. Medium-heavy carbonation and medium bodied. Great malty taste, musky with barnyard notes. Reminiscent of Castelain and to a lesser extent, Bavaisienne. Malty and musky with floral-fruity notes. Light bitter finish and fruity bitter after.

I like this brewer. They do some very interesting things rather well. This one did not thrill me as much as some though. Sampled on draft at the State College beer festival this beer pours a dark golden color with a medium sized yellowish head. The aroma is very sweet and sugary. The flavor is thick and sweet with a yeasty element and a light spicy hops. There is a light sour tang on the finish. A mildly noticeable alcohol burn lingers on this one.

From a 750 kindly shared by Blake. Cloudy orange-rust body with a fluffy, stiff white head. Solid, stiff lacing. The aroma features lemony pale malt and shortbread. Much bigger flavor - pepper, pale malt sweetness, and a musky leafy hoppiness. Light mouthfeel and carbonation. Lemon rind finish.

Poured from a 750 ml. Pours to a thick off-white head that is foamy and lasts. The lacing is spotty at best. The body is a golden hazy straw color. The aroma is strong and full of raisins, sourdough bread, and a light pine. The flavor is lemony and lightly spicy, and light black pepper. The palate is REALLY light, I hardly notice that I have beer in my mouth. Good carbonation.

Thanks to Blake for sharing. pours a light copper cloudy off brown color (orangish) w/ a tall small bubled white head no real lacing a touch spotty. smells fairly good an odd scent definate belgian yeast w/ some light fruits pears and something else. Then a big spicy piece peppers nutmeg, etc. Palate is extremly carbonated ok coating fairly thin. Taste is some sweet malt and fruits w/ belgian yeast then a wierd sour finish like a super sour ball almost and some decent spices peppers and others. A wierd brew to say the least but pretty good.

(750ml bottle) Pours a cloudy amber body with a large cramy beige head. Aroma of mustiness, raisins, and pineapple. Flavor of alcohol, malt, fruit, and spicy. Chewy mouthfeel.
