Aroma is all over the place: fresh hay, wet grass, salt, herbs, honey, lightly spicy hops, cobwebs, dust, white grapes, lemon and a touch of vinegar-like sourness. Flavor reveals much the same characteristics. M. sweet, m. acidic, l. bitter flavor becomes a l. sweet, m. acidic, l. bitter finish. Medium body, creamy texture, lively carbonation. Pours a cloudy orangish-yellow with a small white head. Fruity up front with a light yeastiness. Aroma is of hay, some barnyard, pear, a mild sourness, a mild goat cheese, and some chalkiness. Flavor is of pear, a slight tartness, a slight sourness, hay, mild barnyard, and a mild cheese. Aroma of some sourness and barnyard funkiness. Flavor is also sour in a gueuze sort of way, with notes of wheat, yeast, bread, and apples. Finish is dry and biting. A bit too much carbonation. This is the first in the series. Aroma is mellow earth and sweet malts. Nice and crisp I cannot wait to see what this does over time. Nice going Tom.
