One’s greatest concern in working with Eucalyptus honey is that it can be tinged with the menthol and medicinal aromas that are sometimes associated with this species; it would not be good if those qualities came through in the mead. Fortunately, that has not occurred in this instance. What has come through is a lovely, pronounced honey aroma enveloping a more subtle herbal quality that suggests Eucapytus but most closely resembles Bay leaf. Acidity is just sufficient to provide some crispness. Though brut dry, the varietal’s honey character fools the palate into thinking there might be some sweetness there, and the effervescence is gorgeous to behold!
