Commercial Description:
Can you taste the sage in this varietal? Some claim they do. There is a bit of the herb in this one but mostly we enjoy its fruity (apple, grapefruit) notes and champagne-like bready aroma. Effervescence is lower in this varietal, providing just a prickle to awaken the taste buds. In the cooler months this is a pleasant change, allowing for richer body in the mead. Beautiful light straw translucence and a very clean finish. Food Pairings: The sage varietal stands alone and we recommend enjoying it that way, particularly as a sparkling digestif at the end of the evening.

Bottled. A pale golden mead with a thin white head. The aroma has notes of honey, sage, and spices. The flavor is sweet with notes of sage, leading to a very dry honey and spicy finish. The alcohol leaves a slight burn in the mouth. The mouthfeel is lightly sparkling.

(Bottle, Stockholm Beer Festival, 27 Sep 2008) Pale yellow colour with brief, white head. Sparkling. Fruity, sweaty nose with herbs and old socks. Odd aromas. Fruity, tart taste with notes of grass, green apples and honey. Medium body. Balanced sweetness. Rather weird mead, but still drinkable.

Bottled at Akkurat, Stockholm. Clear pale golden, no head. Flowery and really sparkling with short, lively champagne-like flavour. Citric and concentrated, quite herbal. Like a sweet champagne.
