Commercial Description: Generally speaking, the lighter the honey, the lighter the mead -- in flavor and body, as well as in color. Producing light meads is challenging because they are less forgiving of organoleptic flaws, such as oxidation and the off-flavors of wild yeast, that result from inattentive meadmaking. A well-made light mead, which this particular varietal is, will crisply refresh the palate, leaving you to reflect upon only the subtlest suggestion of its honey origin. Taken to its extreme, there should be no more sense of caloric intake with a light mead than there is of drinking a glass of sparkling water, and it is this quality that makes these meads so wonderful to pair with so many foods.
