A medium, foamy, white head settles slowly to a thin film with a prominent edge. Thick patchwork lacing coats the glass well. The aroma shows heavy nougat up front, with toasted caramel and orange/grapefruit hops following suit. I even picked up a bit of chocolate, which seems completely out of place in an IPA. The flavor follows suit almost exactly. Nougat, caramel, biscuit, and citrus hops provide the bulk of the flavor, but that weird chocolate note is still in there. Havent had to many of the Highland beers but I have to say that this one is ggggrrreeeaaatttt! Pours a nice amber, and the smell is like light sweet fruit. Aroma is citrus and pekoe tea leaf, mixed with cereal and honey. Flavor is initially dry grain, turning sweetish and then citrus, peppery hops. Wow, this is really a complex flavor that doesn’t just knock you over with a single note of hop flavor- goes back and forth nicely from maltiness to hops and on to different hop flavors. Pleasant surprise. Palate is smooth and light-medium bodied.
