Commercial Description:
Um das Thema "Granit" im Bier noch mehr zu verankern, beschlossen wir 2008 erstmals ein GRANIT BOCKBIER einzubrauen, das in alten Granitsteintrögen vergoren wird. Perfekte Vorraussetzungen für ein solches Bier, bietet das Sudhaus aus dem Jahre 1929. Während der Hauptgärung in alten Granitbottichen hat das Gestein Zeit seine Geschichte an das Bier weiter zu geben. Um auf Temperatur zu kommen starten wir diesen Prozeß mit glühenden Granitzwecken. Die Steine werden über offenem Feuer erhitzt und kühlen dann schlagartig in der Würze ab. Die Bierinhaltstoffe karamellisieren und die Hefe erhält optimale Gärbedingungen. Zusätzlich wird die Hefe ganz klassisch "aufgezogen" d. h. von Kübel zu Kübel geschüttet um diese zu belüften. Dank der offenen Gärbottiche können wir die Kräusendecke abschöpfen und somit unedle Hopfenbitterstoffe entfernen. Daraus resultiert ein dunkler Bocktyp mit schönen Karamell- und Röstaromen und einem wunderbaren Hopfenbuket. Nach ausreichender Lagerung in den alten Gewölbe-kellern, ziehen wir den Bock bereits im Juli auf die Flasche, damit bis Weihnachten eine Nachreifung stattfinden kann.

beautifull nose, caramel and rosty flavour, slowly sweetness, caramel sugar, warm to the tounge, chocolate comes out and some fruity moments,

On tap at the Brick Store in Decatur. Pours a light tea-like brown with a small tan head that recedes quickly and leaves traces of lacing. The aroma is dominated by the caramelized malts and fairly sweet with hints of a toasted character and spices in the back. The taste follows the aroma with caramel malts and a bit more sugary sweetness. The mouthfeel is light to medium for the style with decent carbonation. This is a very good bock and certainly original in the brewing process.

on tap. pours ruby with almost no head. nose is caramelly and dark fruit. flavor is very caramelly with a hint of smoke. med body and alcohol in check. pretty nice brew.

Tap at Spuyten Duyvil: Hazy deep amber pour with a light tan ring of head. Unique aroma- mineraly, raisiny, earthy, a touch of sweet & subtle smokiness. Creamy & velvety on the palate. Rich flavor- sweet, yet soft- some raisiny notes and deep caramelized sweetness. There’s an underlying mineral character. Despite the fruity notes it’s clean in its richness. More toasted malt characteristics as it warms. A very nice Heller Bock.

Tap at Spuyten Duyvil. Deep brown beer with a thin white head. Aroma is a little bit chewy. Some nice toasted caramelly character. There is a bit of nice chewy/toasty sweetness. Lightly raisiny with a kiss fruitiness as well. The malts are slightly minerally but still chewy. Fairly sweet mid-palate but it finishes dryer than I would have imagined. Pretty solid brew.

Draft at SD. Pours mahogany body with a tan head. Sweet chewy caramalized malt, hints of cane sugar, unrefined sugars and a chewy caramel. Plum and a light roasted bitterness. A hint of syrup and grain with a lightly nutty caramel note. Decent.

Tap at Spuyten. Pours a deep ruby clear with a thin head which dissipates a bit. Aroma is some dark fruits, tons of big toasted and caramelized malts, toffee, some brown sugar, thick molasses. Flavor is light ly nutty, light to modest fruits, hints of earth, tons of caramelized and sweet malts, syrupy, sharp caramel, dark burnt toast, hints of herbs as it warms. Starts really smooth and easy to drink, then gets a bit messy, slightly harsh, a bit phenolic and slight cheesy/fatty. Still pretty good and interesting for about half a glass.

On tap at the Bavarian Lodge, Lisle, IL., served in a stem glass. The pour was a mahogany color with a foamy, light tan head that diminished at a fair pace, and left some streaky, but clinging lace. The aroma was immediately sweet with a moderate malt nose and caramel. The flavor identified these notes more as malt, caramel and the sweetness of dark fruit and brown sugar. The texture was a little syrupy, but all in all, a very flavorful bock.
