Commercial Description:
This is a VERY DRY AND SIMPLE Mead, made by fermenting honey with no fruit and no sulfites and almost no residual sugar. Ours is a lot less sweet than most meads, and should go well with fish and hors d'oeuvres. We have noticed that people who like beer tend to like this wine, and those who LOVE our sweet Blackberry might NOT like this dry Mead. And be warned; Mead generally throws a sediment and gets cloudy. We have not overcome this, but we have found the flavor of our Mead to be unaffected by the sediment.

Deep gold colour. Still. Some legs. The aroma is honeyish and toasty. There’s sort of a stewed pear note to it. Flavour is the same, with the same stewed fruit note and the toast, the latter of which I find rather unpleasant. Ruins the drink for me, really.

Bottle from Jungle Jim’s. Poured clear pale color with good legs. Light honey citurs aroma. Light to medium body with a dry texture. Medium honey sweet flavor with a medium sweet finish of moderate duration. May expectations were met.

A carbonated feel, under average mouthfeel for a mead. OK, a dry mead, rather ordinary but drinkable.

This bottled mead from a bottle shop poured a small sized head of clear colored bubbles that were quickly diminishing and left behind a transparent uncarbonated dark yellow colored body. The strong aroma was all honey. The mouth feel was weakly tingly at the start and mediumly tingly at the finish. The flavor contained notes of soft sweet honey at the start, stronger at the finish and dry all around. An OK mead just nothing special.

(750ml bottle) Sampled at Ciderwinder 4. Courtesy of Oakes. Amber. Most honey aroma of any mead I’ve sampled. Strange texture across the tongue, strong honey and a waxy residue. Odd finish, 12% not detectable.

Bottle via a trade with TheCheeseman. Pours a clear gold with minimal legs. Tons of honey and some wax, a touch of butter. Taste is a bit tannic, typical mead honey qualities, dry, strong alcohol burn. Not nearly as pleasant as the aroma. Light effervescence, thin palate. Finishes with dry white wine acidity.

The aroma has lots of honey and some yeast. The appearance is golden, orange with no head or carbonation. The flavor is very dry, lacking the necessary sweetness to make it feel like a good mead. The palate is thin. I am not a fan of this mead.

Thanks Chris for sharing this. The mead pours to a dark yellow/orange/copper body with nice legs. I think the other guys that rated this must have gotten "bad bottles". This one was an absolute amazement. Floral and sweet honey aroma. So well blended. The flavor is sweet clover honey, nice floral components. Very well balanced. Nice palate that’s smooth and delicate. I thought this one was quite good.
