Commercial Description:
This is a VERY DRY AND SIMPLE Mead, made by fermenting honey with no fruit and no sulfites and almost no residual sugar. Ours is a lot less sweet than most meads, and should go well with fish and hors d'oeuvres. We have noticed that people who like beer tend to like this wine, and those who LOVE our sweet Blackberry might NOT like this dry Mead. And be warned; Mead generally throws a sediment and gets cloudy. We have not overcome this, but we have found the flavor of our Mead to be unaffected by the sediment.

Thanks Chris for sharing this. The mead pours to a dark yellow/orange/copper body with nice legs. I think the other guys that rated this must have gotten "bad bottles". This one was an absolute amazement. Floral and sweet honey aroma. So well blended. The flavor is sweet clover honey, nice floral components. Very well balanced. Nice palate that’s smooth and delicate. I thought this one was quite good.

750 mL bottle. Pours clear yellow with very thin legs. The aroma is pretty simple light honey, some alcohol, a sort of sour apple tone, and maybe orange zest. The flavor is very mellow and floral, with some clover and hints of orange blossom. There are some very mild woody hints toward the middle, and a nice smooth dry-out into the finish. Not very complex, but solid and drinkable.

bottle at Ft Wayne locals tasting - Wow, the ratings vary widely on this one and from the descriptions perhaps the quality of some bottles has varied widely. This one poured a deep gold and has a definite honey aroma. It’s quickly obvious that it’s a straight up honey mead. The other part about the entry here that puzzles me is the commercial description calling it dry. I had a 0% residual sugar mead a few weeks ago and this isn’t even close. I marked it down as semi-sweet. It’s a pleasant honey rich flavor with a medium body and a touch of alcohol in the finish. It’s not complicated by any means, but it’s enjoyable.

Bottle: Pours dark gold...nose is big on rich, sweet honey and vanilla bean. Very clean, sweet start with the vanilla showing through, finishes very dry. Decent stuff, I’m not sure I understand the big negativity towards this.

750 ml bottle. Pours a clear medium gold with no head. This is a still mead. Pleasant aroma of sweet honey that is fairly well concentrated. The flavor is earthy honey with no sweetness to speak of, which is in sharp contrast to the aroma. Becomes fairly dry towards the finish. The lack of sweetness and the dry finish honestly took me a bit by surprise given the sweet smelling aroma, which may explain some of the wide swings in the ratings.

Bottle thanks to Bman. The smell is very strong honey, sweet, toast and honey. The look is clear, slight yellow, and some legs. The taste is alcohol and honey.
