Aroma of wood, funk, wild yeast, vanilla, toast, chardonnay grapes, and light apple. Taste of toast, vanilla, citrus, tart grapes, wood, yeast, and a sour finish. Aroma is very lactic, tons of funky brett lambicus, lambicy cheesiness going on with a good amount of white grape acidity as well. Flavor is full of brett funk, goaty, cheesy and barnyardish with more grapeskin acidity, tannic but doest become astringent as haywood does- great sour finish. This one borders on being a lambic, and is actually more enjoyable than the Wimlington lambic. I get up to the bar and they erase it from the board 2 minutes before they take my order. Beer Gods where shinning on my and big thanks to John for buying me a glass and saving it for me! Poured a medium and cloudy golden/yellow color with almost no head. Aromas of wood, funky, musty, and an underlying fruitiness. Tastes of wood and an overall lighter funkiness. Lighter tart and sour finish.
