Aroma rich sweet malts bourbon and vanilla but not over powering. Flavor, surprisingly thin and tart sweet sugary notes, caramel. Interesting mix of flavors, good but a bit unexpected.

Thanks fo r the hospitality as well as the cellar tour to try some of these bad boys out... From a personal perspective, i think this one is coming to it’s own as an extremely drinkable sour brown slash Flemish sour brew.... Poured dark caramel, slightly transparent with not too much of any head... Cherry vinegar nose, softer barrel notes... Really drinkable sour brown with lighter acidic cherry notes. Soft carbonation. The beer is a dark brown color with a medium beige head that dissipates steadily. Stringy lacing on the glass. The aroma is vinous with a somewhat woody character. Medium body with flavors of vanilla, oak and dry white wine. The finish is tart grapes with a bit of malt left over. I would have lost money guessing which beer was the foundation of this one. Aroma of honey, unexpected grape tartness and dark malt with hints of bourbon. Bourbon and vanilla hit the tongue first, then the grape tartness, followed by honey and nuts before a slightly bitter finish. Wish I had been able to try regular Chomo previously so I could compare.
