Mouth is well carbonated, very spritzer - reminds me of a Unibroue in that regard. Flavor is lemon, orange peel, with sparingly small amounts of coriander. Very tart which lingers, perhaps a bit too tart for my liking. This has some lambic characteristics. Incredibly balanced, all the characteristics of this beer work together to put a smile on your face. Aroma of lemon, sour apple, spice, orange zest, and slightly peppery. Peppery flavor with lots of zesty citrus on the finish. Dry sour apple note lingering after the swallow. Pours a clear honey/gold color with a large frothy whtie head. Nice funky aroma with notes of wood, of course, slight citrus and maybe a hint of grass. Light bodied with light carbonation that is very refreshing. Funky flavor with notes of old wood, lemons, yeast and spice. Tart aroma reminds me of lambics, expecting dry flavors. Very light and crisp, not too dry at all. Quite a lot of sediment on the bottom.......chunky bits fall slowly to the bottom of the glass once lifted out of the bottle and add some haze. Beer gets a bit sweeter too, but not by much. Aroma of funk, sour apple, lemon and yeast. Taste of spicy sour apple and lemon with a funk flavored finish. Interesting.
