The light tan head is very creamy and the tight bubbles remain long after the pour. Small peaks build slowly.
A fermenting sour apple aroma comes from this one.
The flavor is tangy/sweet sour apple and brown sugar caramel. Tangy dry finish. This turns Unibroue Éphémère Apple into a beer. bfeldmann (1042), Wilmington, Delaware, USA

Aroma was of spices and lemon/lime maybe, vanilla was in the background. Flavor was hence a sour first taste and sweet on the aftertaste very different very different for this style. | 3.7 | Aroma | Appearance | Flavor | Palate | Overall | | 6/10 | 4/5 | 7/10 | 5/5 | 15/20 | Jun 19, 2006 A rich, red color with orange/brown yeast in the glass at the first pour on an undisturbed bottle with a tan head and fat bubbles rising underneath in an aggressive carbonation. A definite tartness to the nose that shows an aged, rounded vinegar and some caramel with some yeast fruitiness. The flavor shows more Brett/Lambic bubblegum that the vinegar in the nose, but both are there. They are the dominating flavor in this beer but are not overwhelming and are beautifully balanced and softened by the sweet, caramelly malt. There is also a touch of tobacco and a unique, oily character to this beer but it is not offensive. sloth (1683), Ceciltucky, Co., Maryland, USA
| 3.8 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 3/5 | 8/10 | 4/5 | 16/20 | Jun 18, 2006 Medium sized light brown head, fair retention, little lace. A very hazy brown colored brew, one murky little critter. Nose of caramel at first with licorice, plum and a touch raisiny. Body is med/full with a lovely creamy texture backing the gently aggressive carbonation. Caramel, light chocolate and spice flavors, fruity, dark malts, hints of licorice, cocoa and a small shot of coriander also. Lightly dusty and earthy notes lie underneath it all. Finish is lightly sweet and fruity. Me like! Props to Robert @ SLL for this one! eaglefan538 (2403), Wilmington, Delaware, USA
| 3.9 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 7/10 | 4/5 | 16/20 | Jun 17, 2006 Poured a solid brown color with a tan-white head that was very persistent, never went away. Lacing was solid, no rings, but lots of drooping lines of lace. The aroma was of limes, spicing (those two together musta been the level of cacao), some cinnamon, some vanilla, and oranges. The flavor followed suit with a sweet-sour aspect that normally doesn’t please me. However, the combination of everything in this one was quite enjoyable, although a little over-spiced to be excellent. Very not your typical dubbel, but as a belgian-esque brown ale, darned dandy. Mouthfeel was moderate to thick for the style, creamy. Odeed (1679), Bakersfield, California, USA

Cloudy dark brown with a nice beige head. Aroma of chocolate, orange zest, cinnamon, caramel, vanilla, anise. Medium body, light carbonation. Some sweetness in the flavor, evidence of the spices, notable alcohol, and a touch of chocolate. Not a style I care for but this was very nicely done. awaisanen (1279), Irvine, California, USA
| 3.8 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 4/5 | 7/10 | 4/5 | 16/20 | Jun 4, 2006 From 750mL Bottle. Pours a cinnimony reddish brown color with a medium, frothy off-white head. The tart brett aromas linger nicely with some light fruits, giving it a nice bouquet of fermented apple cider, complete with lemon peel, cinnimon, cloves, and fresh rhubarb pie, sweetened with a pinch of brown sugar. A touch of light chocolate maltiness starts this one out, before being taken over by a medium bodied texture full of bretts. After the bretts start to mellow out, a spicy mustiness starts to build, taking over in the form of an aged garochta. Some light green pepper spice and raw tulip stalk herbalness balance out the maltiness. Unique blend of a spicy belgian ale with the tart addition of brettanomyces, but the flavor balance is a bit too far out there for my palate. Still, an interesting and highly enjoyable brew overall.
