Commercial Description:
A special sour blend of Bam Biere and La Roja. Persequidor, a new sour blend chosen from select barrels to reflect our never ending pursuit and passion for perfection in every bottle. Cellared a further six months before being offered for sale. As always; unfiltered, unpasteurized, and naturally delicious. Not a single beer, but rather a journey into taste!

12/8/2006 Hazy, dark amber body with a medium sized off-white head. Lasting, nice lace. The aroma is heavy bourbon, cherries, vinous with a touch of maple syrup. The flavor is moderately tart, fairly dry, sour cherry, pears, apples, bourbon, lemon, cola and concord grapes. Medium/light body with moderate carbonation and a tart and tannic finish. La Roja Lite.

Bottle. Courtesy of hopdog. Thanks Steve! My bottle is spelled Persequidor with a Q. It’s spelled the same way in the description on the side. Odd. Chunky, rusty amber pour. Small white head. Lots of sediment chunks throughout this. Strong sour fruit in the aroma combined with wet wood (oak mainly), vanilla, sweet malts, and funky yeast. Taste is oak, vanilla, sour fruits, light horseblanket, Belgian yeast, earth notes, and caramel. Body is lightly carbonated, acidic tartness, and dry as a bone with a light medium overall feel. Finishes with more sour fruits, acidic tartness, funky yeast notes, earthiness, oak, dank basement, soft vanilla and hints of caramel. Yummy!

cloudy dark orange, wispy off white head, light sweet fruity aroma with nice oaky character and a musky touch, nice malt flavor balanced with oaky character and only a hint of funk,

From a 750mL Bottle. Aroma wafts off red currants, golden delicious apple skins, toasted coconut and fragrant kala jeera. Supple and sour. Pours a deep ruddied mahogany with amber edges and hickory tinted foam. Flavor is a subtle, yet judicious, flowery perfume of high sourness and candied apple cores. Light caramels find a home amongst lightly searing aceto tannins. Nips of creaminess play off of bold white balsamic notes. No real noticeable hop presence, which I was hoping for from the Bam. A touch thin bodied, but yielding pleasent sourness and complexity. Finishes dryly and with a quick quip of salted fruit. Alcohol actually presents in the backend, with lemon liqueur. Very nice.

On tap at Stone. Hazy golden yellow with creamy white head. Slightly sour aroma with fruit and strong oak notes. Sweet shite wine chacter transitioning to a fruity sourness and finishing with a great wood taste.

Sampled at the 1st annual Stone Sour Festival 2007. Interesting wood flavors and some strong sour notes. Very good.

Draft-9th brew of Stone 1st Annual Sour Festival, July 22nd 2007. Shared this cool day very mellow day with bikesandbeer, wetherel, westsidethreat, padrefan, fordest, denverlogan and many others. Pours yellow with no head. The aroma is nice and sour. The taste is fruity sour and pungent and quite interesting overall. Bit of a rotting apricot taste and on top of that spice in the after taste I’m guessing coming from the bam biere. Pretty good overall.

Bottled. Very yum. Hazy dark amber coloured with a small tan head. Malty with notes of oak, balsamico, vinegar, grapefruit and citrus. Yum.
