Commercial Description:
The fourth in our Bam Farmhouse series, and perhaps our most adventurous; a traditional farmhouse style hefeweizen. Weizen Bam seamlessly blends traditional German style hefeweizen yeast with our own local wild and sour cultures, for a melange of the most flavorful sort. Ruddy golden, with yeast driven esters of banana, spicy clove, and nutmeg all wrapped up with a generous dose of good-natured rapscallion delight.

Bottle from Perry’s @ Livermore. I really like this one. Right off the bat there’s some brett funkiness in the nose and aroma. Nose is said brett, and must. Pours a cloudy light straw yellow with lots of head. Flavor is a nice refreshing sour and clean experience, with notes of brett, grass, lemon, and wheat. Finishes clean, and dry.

750ml Bottle: Aroma of wheat, lemon, light grass, light clove, and hints of Brett and funk. Poured yellow/flaxen in color with a medium-sized, rocky, off-white head that diminished but lasted throughout. Cloudy. Very sparkling. Flavor is light to medium tart. Tastes of citrus, wheat, tart fruit, light Brett, yeast, slight banana, slight funk, and some spices. Medium body. Tingly texture. Lively carbonation. Funk, wheat, and Brett finish is ever so slightly dry. Not really a Hefeweizen, but still nice.

FoBAB tasting 2009. Bottle beer. Pours a bright hazy yellow with a thick and foamy bright white head. Good retention and lacing. Aroma is lemon, wheat, straw, spice, some mild sweetness. Flavor is citrusy and tangy with predominately lemon, wheat and spice flavors. Generally light-bodied with a clean citrus finish.

cask at beer engine. pours an orange pink with a frothy white head. aroma of strawberries, tart cherries, bread, wheat. very smooth and creamy. tight!

V bright cloudy yellow. Strong lemon / apple cider aroma.Almost cider texture with strong lemon notes. Light wheat notes in the finish but overwhelmingly dominated by lemon / zest almost cordial - like. I gte the funk and fun behind this, but not my cupf tea

750ml bottle. pours a cloudy white with a small filmy head. aroma of apple sauce, must, lemon, a bit of sour, funk. flavors a similar. the hefe actually blends nicely with the jolly pumpkin wild yeasts. crisp, dry, light, refreshing. this is good stuff. probably my favorite bam series beer.

On tap at the Pony. Very very pale golden, like a hazy Bud Light, with small head. Mild tangy funk tart banana aroma. Very light tangy wheat funky water. Nice hint of flavor, but it seemed to have only a hint. Way too light and watery (and it was my first beer of the day).

Bottle from the Sam’s in Downers Grove, Illinois: I had to wait a long while to drink this beer, since its head-to-body ratio was ten-to-one with even a careful pouring. Once one could see any body under the foamy white head, it was a very pale milky yellow and looked more like a Witbier. The aroma was fresh sliced bananas with a lemony funkiness to it and had no hefeweizen spiciness. The flavor was very lemony with some soured wheat malt and, again, no hefeweizen spiciness or even banana taste. Had I not known that this was from a brewer that had to throw "wild" yeast in Absolutely Everything, I probably would’ve drain poured it as an infected hefeweizen. It’s an interesting, if not wholly satisfying, drink that probably should be listed under another category, ’cause "German Hefeweizen" it ain’t.
