Commercial Description:
The fourth in our Bam Farmhouse series, and perhaps our most adventurous; a traditional farmhouse style hefeweizen. Weizen Bam seamlessly blends traditional German style hefeweizen yeast with our own local wild and sour cultures, for a melange of the most flavorful sort. Ruddy golden, with yeast driven esters of banana, spicy clove, and nutmeg all wrapped up with a generous dose of good-natured rapscallion delight.

Sample courtesy of Bockyhorsey at the hellbilly holiday tasting. Nice cloudy gold color with a small foamy head that lasts. Lots of yeast, wheat, citrus and funk in the aroma. Grain, yeast, lemon and funk in the flavor. Light and smooth on the palate. A really good hefe! Thanks Bill!

Sample courtesy of bockyhorsey at hellbilly*s holiday tasting. Pours a hazy yellow with a white head. Nose is sour wheat, barnyard funk and malt. Taste is malt, sour lemons and more barnyard funk with some aspirin in the finish. Lighter mouth feel. Good brew. Thanks Bill!

Hazy yellow with slight white head. Nose has slight funk, wheat, and lemon. The same for the flavor, except the wheat is far dominant, even into the mildly funky finish. Light body with zesty carbonation. Overall very refreshing, but not very interesting.

750 ml bottle (9/17/08) Courtesy of Hopscotch CU/WVU throwdown)-Pours a cloudy arangish yellow with a small ring for a head. Has an aroma of tartness, sourness, banana, and clove. Taste of the same with no real Hefe characteristics. It had more of a wit or Saison. This light to medium bodied brew was good and was meant what it was supposed to be.

My Bottom Line:
This half-Weizen, half Wild Ale is the setting for a union of dry wilderness, citrusy fruitiness and banana esters which ends up as a playful, tart and quite slender quencher.

Further Personal Perceptions:
-A fluffy head of foam tops the cloudy pale straw yellow.
-Carbonation appears intense in the glass, but is actually quite soft on the palate.
-Biscuity cereal notes develop with time.
-The finish is quite diplomatic in its intensity and flavor contribution.
-Cloves are found tightly linked to the funk.
-Tartness is decent, and is by no means aggressive.
-Some wooden dryness is tasted throughout.

Bottle 75 cl. The appearence is rather odd on this one. Pours a milkypale piss-yellow with a hazyness to it. The nose is with marcipan, lactose, green lemons and grains. The taste is bitter but with the calmness of the german wheat. I also taste pomelo-citrus, walnuts with a finish that is bitter and packed with grapefruits. The palate is rather waterish but all together is this one way more powerful and complex l than the Hefe Weizens you ever will be served in bierstubes in Bayern

Like the other bams this has a tart mild sour finish, light wheat to it, very crisp with a soft earthy hopping, soft citrus, mild hint of lemon. Very similar to how I remember bam, I need to try this and the original side by side.

Brown bottle, 1 pint 9.4 ounces, batch 306, via Importations Privées Bièropholie, savoured on November 28 2008; eye: golden, clear, good effervescence, champagne-style white head that turns into a nicely thick sheet, light lacing; nose: acidity, horse, fruity, light spices, refreshing; mouth: acidity, horse, sourness, light fruity (lemon), refreshing, spices, lactic, short finale in horse with good sourness, rather sour, medium body, mild astringency, a bit thin; overall: good FRANÇAIS Bouteille brune, 1 pinte 9,4 onces, via Importations Privées Bièropholie, savourée le 28 novembre 2008; œil : dorée, claire, bonne effervescence, mousse style champagne qui se transforme en une bonne couverture, légère dentelle; nez :acidité, cheval, fruité, léger épices, rafraîchissante; bouche : acidité, cheval, aigre, léger fruité (citron), rafraîchissante, épices, lactique, finale courte en cheval avec une bonne aigreur, plutôt aigre, corps moyen, astringence moyenne, un peu mince; en résumé : bonne
