The flavor is lightly sweet, thick body with loads of umami. Short watery tail. Nice summer sake, fresh, invigorating and delicious. Distinctly apple and a little buttery/nutty (very little) the flavor is there right away yet overall very very light. Alcohol is smooth and extremely easy. Peppery aftertaste that makes you wish you had bought a larger bottle. A little pricey but well worth it. austinpowers (2828), New York, New York, USA Jan 26, 2004 Updated: Feb 1, 2004Simply terrific!!! Almost as great as Ohtouka Nama Sake, but falls short by a nose. The lovely Kaika "Flower of the Wind" even bests the highly-touted Kamoizumi Junmai Daiginjo by being a tad smoother and with less alcohol burn. The nose is moderately strong of vanilla and candied fruit. The taste is medium dry and very light. No thick, rich mouthfeel here, as the taste is light and delicate with a touch of astringency and no detectable butteriness. A slight hint of alcohol burn in the finish as it goes down. Terrific!
