Yep, very clean, this dryness and flavor pattern seem to be the norm for Niigata region sake, Hyogo is similar. I’m partial to the fruitier flavors from the far north. The nose is clean and chalky with some light dried fruit; apricot, koji, gruel, light grain and dry dessert flowers. The flavor is a bit dry with a moisture sucking finish. A nice clean body and tail, but it’s just a bit too dry to be enjoyable. I really want to love it though! Decent sake though, some umami as it warms. Thanks IslandHaole!
