Commercial Description:
In the little town of Bavay, only a few miles from the border with Belgium, the Theillier family has crafted its fine bière de garde for generations. The charming brewery is built into the Theillier family home, which was constructed in the 1600’s on sturdy Roman foundations. La Bavaisienne is artfully brewed, in very small batches, using a resourceful combination of ancient and modern equipment.

Pours gold with a decent white head. Some nice grassey notes are present on the nose. Tastes of honey and maple sugar with a nice breaddy finish.

750 ml bottle into Aventinus glass. Purchased somewhere in the Denver area. There was some brown crust around the cap which made me a bit worried about the beer, but I don’t think it was infected, since it was dope (or, if it was infected, then I liked this particular cocktail of bacteria). Medium to large fizzy foam head of a peach hue sits atop an amber orange transluscent beer displaying visible carbonation. The head mostly diminishes to a thick dusting on top. Lacing has varied bubble size from uber-tiny to medium-small, quite a big difference even though none of them get large, and it’s brittle and sudsy, crumbling away quickly. Malty warm soggy orange peel smell accents a mostly peaches-and-cream aroma. There’s also some toasted sourdough bread in the aroma. Very malty mouth, like a gran cru Belgian strong, with a flavor echo of the peaches and cream smell. This is a very deft blend of soft feel and flavor with intensity, like a warm soft bed in the moments right after you wake up but haven’t opened your eyes, that feeling that is so tangible and all-encompassing in its gentleness and niceness. There’s a lemon cream pie flavor in the beginning of the finish with just the hint of creamy acidity, and some nutmeg and other spices that I don’t know to give it character. Incredibly dope beer that I’d love to have again.

Light beer with a permanent big fluffy head. Spicy aroma and taste. Not all that drinkable, and thin-medium mouthfeel. Pepper, cloves, cardomaon, grassiness and hops there. Best of France, whatever that should mean. Still drinkable at end of hot summer day. Better with food.

Bottle at The Moan and Dove. Hazy golden color with yeast in suspension, thin white head. Amazing aroma of spices, yeast, fruits and barnyard. Amazing flavor of fruits (apples), yeast, barnyard and spices. The body is light to medium with a dry mouthfeel and lively carbonation. Excellent, mind-blowing beer, it’s insanely well-balanced and complex, every elements fit and stick together as a team.

Hazy medium-orange body with plenty of particulates, puffy light tan head with brown speckles. Earthy, peppery hops aroma with biscuits and toasted malts. Unique flavor profile, peppery with slight metallic notes, plenty of herbal tea-like hops, and slightly sweet toasty biscuity malts. After sampling nearly 1100 beers, I can’t say I’ve tried anything quite like this. Complex, medium-bodied, and tightly carbonated, this unique beer is certainly worth searching for. A dark golden color with a white foamy head when poured from the bottle. Aromas of hops, front lawn grass, and spices. Taste is lightly bitter and of cloves and other spices.

750ml bottle: Deep amber, mostly clear, filled with medium-large sized particles suspended, large eggshell colored head. The aroma is like a musty butter to start, then opens into mild honey-covered malt, grass, bitter stale hops & lemon infused honey, sweet oats, malt, orange rind. Taste is very quickly spicy (noble) hops, then sweet light/medium malts, which are slightly syrupy-sweet, and sweet citrus (orange & lemon rind). There’s a hint of alcohol towards the middle, but it’s something you really have to work to find in the flavor. Mostly I just get sweet, butter malt & grass. Moderate-lively carbonation that is quite easygoing on the tongue, medium bodied, and slick. Finishes sweet and crisp, with hints of honey, grain, and grassy hops.

Bottled. Dark amber, lively head. Buttery malt aroma, It’s well hopped with notes of grass, but it’s dominating feature is the soft, full, buttery malt character. It finishes with balanced, salty bitterness. A gem amongst French beers!
