Commercial Description:
In the little town of Bavay, only a few miles from the border with Belgium, the Theillier family has crafted its fine bière de garde for generations. The charming brewery is built into the Theillier family home, which was constructed in the 1600’s on sturdy Roman foundations. La Bavaisienne is artfully brewed, in very small batches, using a resourceful combination of ancient and modern equipment.

aromas of cookie like malts, must and orangy hops. golden color with some haze and a thin lace covering the surface of the beer. malty, cookies, bread, floral hop flavors and a bitterness that balances the malt in the finish. slight citrus flavors. cewey texture but still fairly dry. not as fruity as the saisons across the border. delicious chewey beer. tatses substantial but easily drinkable.

Nice looking amber beer with a massive off white head that is nicely retained. Aroma is light apple juice and an aged aroma and leather. Flavor is highly estery with perfume and floral charachteristics. Very unique beer, I like it, but not passionately.

Sparkling copper, large frothy off white head. Aroma was a tough one, but I basically got some earthy, leathery, cobweb type notes. Not the best aroma, but the flavor is where this beer stands out. Still hard to describe, but I got lots of fruity esters, a hint of caramel malt, and some citric hops to round it out. Interesting and quite complex as it warmed. Full bodied, soft carbonation, very dry finish. A great one that needs to be tried by all....

This beer rocks! Sparkling clear, burnt orange ale with a large, frothy, off-white head. Great retention with cascading lacework. Very earthy, musty aroma with notes of mildew and leather... not entirely pleasing to the olfactory system. The flavor more than makes up for that. Malty, fruity, hoppy, terrifically balanced. Full-bodied with lively carbonation. Lengthy, bone-dry finish. World class beer!

Mahogany pour with a nice creamy head and sheet lacing. Clear. High carbonation levels. A beauty. Wet malt aromas some crystal malts, with a nice mellow hop profile. Small spices abundant with a slightly sour note. Malt dominates the flavor though the hops sneak in there. A bit nutty. Hops seem mostly earthy. High malt character sticky palate and a bitter finish.

Oaky amber color, not completely clear, just a lite haze. Just like a haze of fog in a small french village, a piller of smoke coming from the chimney of a small cottage. Just like the bubbles in this chimay glass. The head is creamy; permanently thick & creamy with lots of retention and lacing. The aroma is lightly malty. A breeze of sweetness with some crisp hops riding in the wind like pollen in a field. Lots of caramel with a slight note of my friend Brett[anomyces]. The flavor is very spicy with lots of hop bitterness. The malts are cowering in the corner while the sweet & bitter duke it out. The tart carbination is the referee, watching over the battle. This is all taking place in an old barn, probably housing horses due to the barny overtones. Very good with just a bit of alcohol showing. Many thanks to BBB63 for this gem!

White head. Clear orange/red colour. Has a very ripe farmhouse aroma. Begins malty with touches of carmel and chocolate, but develops into a dry finish with a bold leafy/grassy flavor. Complex and interesting.

Hazy light copper with large tan head. Aroma is medium sweet, caramel, fresh-baked bread, light vinous. Taste is honey medium sweet, herbal, caramel, toasty/biscuit, some grape/vinous, peach, earthy. Smooth medium body that belies the complexity contained therein. What a wonderful beer!
