Commercial Description:
’A taste of Québec’s winter... and warmth! Dégel is the product of the sugars still held captive in the ice that is at the origin of Neige, our apple ice wine. When exterior temperatures rise, country steams begin to flow and spring is once again on its way, we transform the apple must’s second run into a fresh and delightfully fruity elixir. Dégel can be enjoyed on its own as an aperitif, or as an accompaniment to white meat or fish. Serve iced.’

Pale blonde. Much less sweet than their famed ice ciders, more acidic like a white wine, but with an apple angle. Works fine for a white wine replacement but doesn’t pop out.

[2249-20090606] Sample. Apple sweet dusty floral hints in the aroma. Clear, light yellow body with no head. Tart almost sour apple flavour. Light body is quite tart. Drinkable, interesting to try.

Pours a hazy amber with some hints of carbonation present. Smells tarte and dry. Tastes dry and crisp with layered appley hints throughout. Body is a little lacking, but otherwise a solid cider.

2009-06-06. Light yellow body, headless. Aroma of tart apples, very very light musty touches. (6+) Flavour is surprisingly tart, sharp apple with white wine like dry spells, tart skins and apple seeds. Average palate. Quite dry. An eye opener! Would probably have been nice in the margarita/sangria like concoctions they were serving it in. 2008 Vintage Bottle at Mondial 2009, Montreal

2007 bottle thanks to BMan1113VR. Clear with a faint green tint. Great legs. Aroma is of apple, butter and band-aid. Taste is of granny smith apples, butter, an earth.

2007 bottle served chilled at Mondiale. Pours a hazy turbid crackery gold with a slight greenish tinge and a light turbid thin head- yet no carbonation- serving process was through a bottle through chiller, then a hard downward pour on a strange serving machine. Aroma is wine-like chard and light souv blanc wine tannic, green apple, slight acetaldehyde, and ok apple cider with some ptih and core cardboardiness. Flavor is white wine like as well- stale chard and maybe even towards a fruity pinto grigio- apple like, must and green apple skin, ok tartness, and moderate to lower sweetness than expected and a slightly off finish- stale wine like- didnt seem close to 12%.

Bottle thanks to bman1113vr. The smell is apples, yeast, fruits. The look is clear, light straw colored, no head, and some legs. The taste is fruits, dry, alcohol, and apples.

(750ml, 2007 vintage, courtesy of Bman1113vr) Pours a clear greenish yellow body. Aroma of apple, white grapes, and mustiness. Flavor of sweet, sugary apple.
