Commercial Description:
’A taste of Québec’s winter... and warmth! Dégel is the product of the sugars still held captive in the ice that is at the origin of Neige, our apple ice wine. When exterior temperatures rise, country steams begin to flow and spring is once again on its way, we transform the apple must’s second run into a fresh and delightfully fruity elixir. Dégel can be enjoyed on its own as an aperitif, or as an accompaniment to white meat or fish. Serve iced.’

750ml bottle. 2005 Vintage. pours a clear light yellow, looks like white wine. Aroma is big on apples with a touch of honey, and some alcohol. Flavour is very much like their iced wine, just a tad less sweet, and the mouthfeel is nowhere near as thick. This is excellent stuff, its like apple wine. Really great apple flavour, once again La Face Cachee De La Pomme shows us why they are one of the worlds best cideries.

Bottle (750ml) shared with my wife. 2005 vintage. Pours a clear, very pale gold with hints of green, lots of tiny bubbles and no head. Nice apple aroma along with some wood and alcohol. Flavour: Whoa, that’s different, I did not expect that -- like my wife said, it’s like a white wine made with apples. Sweet and tart apples with a dry, tart finish. At 12% it’s stronger then I’m accustomed to when it comes to Cider but it’s well hidden for the most part. A unique take on a Cider, I quite enjoyed it.

Sample at the cidery. Very green, slightly sour, Granny Smith like cider, although apparently it uses Macintosh apples and another I can’t remember... slightly dry, vinous, similar to a white wine but a lot more tasty in my opinion. The tart apple flavor was strong and pleasant though there was a weird off flavor in the finish.

Pours a clear golden color. Good aroma of apple skin. Good flavor of slightly tart and sweet apples, the alcohol is barely noticeable. The body is light to medium with a liquorous texture. While being good and well done this doesn’t compare to other Face cachée de la pomme products like Neige.

Dégel 03. Yellow cider with fresh apple purée aroma, very nice and sweet. Very smooth dry cider with lactic notes. Like a nice white wine, pleasant and classy. Sampled with Mtl crew, April 16 2006.
