Commercial Description:
’A taste of Québec’s winter... and warmth! Dégel is the product of the sugars still held captive in the ice that is at the origin of Neige, our apple ice wine. When exterior temperatures rise, country steams begin to flow and spring is once again on its way, we transform the apple must’s second run into a fresh and delightfully fruity elixir. Dégel can be enjoyed on its own as an aperitif, or as an accompaniment to white meat or fish. Serve iced.’

Aroma:apple and withe wine.... Appearance:Clear yellow....... Flavor:dry and light acidity like a white wine,light apple....

A light yellow cider with no head. The aroma is strong with lots of apples. The flavor is very dry with powerful notes of apples, but also quite sour.

Clear Pale Yellow, No head. Aroma of Apples and White wine. Flavor is at first very winey/citrusy, like a Savignon Blanc, perhaps, with the apple flavor becomming more prominant as it warms. Nice Lemony tartness in the finish, Big thanks to Springslicker for sharing!

2003 Bottle drank in 2005: Poured a light yellow color cider with a thin body. Aroma of apple is quite faint and dry. Taste is also very dry with limited amount of sugar. Apples are discernable but seem to be lacking in character. This is far off from Neige or Frimas and therefore probably not something that I will go back to often.

Bouteille claire de 750 ml achetée directement chez le producteur. La récolte 2003 à un taux d’alcool de 13%. Arôme: Odeur fruité et de pommes. Apparence: Couleur jaune dorée. Saveur: Goût de pomme et d’épices avec une pointe d’alcool. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture huileuse. Moyenne effervescence en bouche. Bottle at the tasting room
Light goldish green. Nose of bright apple, a little musky but extremely fresh. The flavor is balanced with sweet cobbweb flavor and musky tartness. Clean yet rustic and uniquely excellent.

2003 bottle. Light yellow in colour, still. Aroma of apple skins, alcohol and spices. The flavour was slightly sour, lots of green apples, spices with just a bit of brown sugar sweetness. Dry mouthfeel, oily body. Finishes dry with some alcohol.

07.10.05 RBSG tour. Still cider. Pale green tint. Dry, tart finish. Light throat tingle. Bursting boquet attacks, leaves slick of mineral and leather behind.
