Commercial Description:
’A taste of Québec’s winter... and warmth! Dégel is the product of the sugars still held captive in the ice that is at the origin of Neige, our apple ice wine. When exterior temperatures rise, country steams begin to flow and spring is once again on its way, we transform the apple must’s second run into a fresh and delightfully fruity elixir. Dégel can be enjoyed on its own as an aperitif, or as an accompaniment to white meat or fish. Serve iced.’

A light yellow cider with no head. The aroma is strong with lots of apples. The flavor is very dry with powerful notes of apples, but also quite sour.

Bright, very light yellow/green colour. Bright, fruity, leathery aroma with hints of wood and alcohol. Dry, tart character light fruitiness. Alcohol comes in very light. Only slight hints of sugar.

(2003 bottle, RBSG05) Crystal clear straw body with nice legs. Aroma is sweet, apple, some crisp/tart, clean, faint alcohol. Taste is sweet, apple. Slight alcohol burn in the finish leaves a nice warming. Medium-full body with a bit of acidity. Very much a sipping beverage.

(750ml, 2007 vintage, courtesy of Bman1113vr) Pours a clear greenish yellow body. Aroma of apple, white grapes, and mustiness. Flavor of sweet, sugary apple.

Very clear, pale greenish yellow with the slightest legs. Apple skin, dry without any of the rich face cache de la pomme sweetness. Woody and herbal. No acidity in mouth, watery flat with a light oiliness, sharp yet well contained 13% ABV. Like chewing on a woodchunk, too dry for me, I’d probably like it more sparkling in that regard.. or simply with more apple flavours. Watery, astringent and vinous.. Even the best breweries can’t all make only the best products.

2003 Vintage: Still, very pale, faint greenish golden color with a low viscosity. Aroma is green and tart, nice and dry. Body has a nice sour apple flavor with subtle complexity and a dry, lightly warming finish. A good, very drinkable cider, but doesn’t come close to their other two offerings.

From a watery gold pulses apparent acidity and milky protrusions...A somewhat thin body offers acidity and bitterness, as well as a remarkably low apple sweetness...Alcohol warms in the end, and watery passages further disappoint...As though it didn’t know what it was supposed to be...Not bad, far from competing with the greats...

Pours a hazy amber with some hints of carbonation present. Smells tarte and dry. Tastes dry and crisp with layered appley hints throughout. Body is a little lacking, but otherwise a solid cider.
