Cloudy apricot orange, thick white head. Fruity tripelish aroma sans the alcohol. Yeasty. Allspice? Clove? Flavor is dryer than the aroma would suggest. Very drinkable, mellow carbonation. Dry, lightly peppery yeasty texture. Low alcohol levels. Again, very drinkable. Now some more of that pepper/clove/allspice flavor is coming out, and it’s very nice. This is really what I wish more saisons would be like. I have to admit, I don’t remember ever having a Belgian blonde quite like this one; it really stands out as being especially tasty and well made. Once again I am a little surprised to see another good Canadian beer not getting the appropriate love. From other descriptions, it seems possible that some bottles were in less than stellar shape. If this was from a fancy Belgian brewery with a fancy label, I am sure it would get scores at least around the 3.5s.

Dessert spiciness, citrusy fruitiness and doughy yeast are undermined by vegetal leafiness in this easy drinking but as-of-yet unrefined Belgian-style Ale.
Further Personal Perceptions:
-A sheet of foam covers the amber-tinged honeyed golden.
-Carbonation is prickly and the body nicely lean, making this a quaffer.
-The finish is a balance of yeast and delicate spicy hop bitterness.
-I was gladly able to pour myself a glass of this Gueule de Bois without the yeast sludge which seems to fill their bottled first batches. As soon as you pour the yeast shot in though, the colour becomes incredibly muddy and tropical fruit and doughy yeast battle it out for flavor profile dominance.

Sep 26, 2009 5,79$ for 500ml, recommended by the service guy at Peluso, who told me some Northern herb has been used in its brewing. Served in an Orval glass, which was surely appropriate since Orval seems to be the inspiration here. Cookie-like and yeasty aroma. The maltiness also comes out cookieish, with a brett-twist, and a pretty intense herbal hop presence that has a tongue-tingling effect. Also, notes of spices, citrus, and a distant sweetness. Interesting although there was something, I don’t know what, that made it no so easy to drink and not all that pleasing, and I don’t even think it was the word Maitre-Brasseur on the label...

Sep 16, 2009 Muddy dulled golden, opaque, wearing an honest white cap. Heavily yeasty aroma launches lots of esters up the nose. Banana and orange juice notes find their way through straightforward breadiness. All about sweetish breadiness in mouth until a considerable hop attack slices through, finishing with a dry and orangey, tea reminiscent finish. Switches abruptly from sweet to dry, provoking a repelling sensation that approaches chalkiness, but that fades after a few sips. Its medium body feels fairly round despite the timidity of the malts’ flavours outside graininess, but the small-bubbled carbonation does not really fit the flavour profile. Not a particularly clean offering in which the yeastiness, which is not all that complex, takes a lot of place, leaving little room for the rest.
