Flavor is nice, not overly sweet, a hint of vanilla at the back of the tongue. Palate is not overwhelming, somewhat bubbly but short finish. Nice beer but clearly not one of the best trappists. Much milder though, as both the Blonde and the Dubbel seem to lack "fizz" or bite as say an Orval or Chimay which I’ve been led to believe was a cousin. ANyhow, this beer was generally pleasant to drink, but I’m still struggling on what food I could pair this with properly. It has the taste of the apple between the skin and the tougher part, namely where it ripens first. Huge head when poured delicately, although dissipates quickly.
