Pours a dark amber-red with a lacy head; a little light for a quad, but still nice looking. The aroma is a little tart and yeasty with a healthy dose of alcohol that burns a little. Caramel, raspberry, yeasty tanginess and some bubble-gum flavors. At first, the funky tartness is pretty noticeable, but it mellows as the beer warms. Finishes dry with a sharp alcohol bite that is slightly distracting. Pretty full body with smooth, creamy carbonation. A little different than the other trappist quads that I’ve had, with less malt richness and more alcohol bite. Almost leaning toward a tripel with the dryer spicier qualities.
