This beer had been cellared for over three years when we sampled it - slightly lessened carbonation, and some particulates that the #10 didn’t have. I did, however, see a lot more character and estery quality in this older version, and preferred it. Pours a golden yellow; white head with great retention and lacing. Lots of yeast, citrus, esters, and witbier-like spices. Light carbonation: creamy, medium-to-full mouthfeel, with plenty of yeast, vanilla, and sugar. Medium finish: creamy, vanilla, and spice.
(#10. Clear, golden-yellow without particulates. More full flavored, but less nuanced than the aged version. 7.4.7.4.15=3.7.) chimpscampee (566), Madison, Wisconsin, USA

Okay, it was a mistake to try this in december. It had an acidic edge without much hops that ruin the finish for me. xproudfoot (729), Paleolithic, Pennsylvania, USA

| 3 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 2/5 | 6/10 | 2/5 | 13/20 | Nov 21, 2006 Crystal clear orange amber with absolutely no head or lacing. Aroma is oranges, grass, trappist yeast. Some caramel and fruityness as well. Flavor brings all of this, very high carbonation though. Pretty dry at least. Flawed but enjoyable. Lacks the delicate balance of the better ones out there. dkoonce (888), People’s Republic of Athens, Ohio, USA
| 3.2 | Aroma | Appearance | Flavor | Palate | Overall | | 6/10 | 3/5 | 6/10 | 3/5 | 14/20 | Nov 19, 2006 Light gold with a lose fizzy head. The aroma is fruity and wheaty with a slight sour note. Very light, with a definite Belgian ale taste. I can taste a doughy yeast flavor as well. Almost no finish.
Held this for awhile and think a summer day would have been a better time to enjoy this. tupalev (2617), Waterloo, Ontario, Canada
| 3.6 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 3/5 | 8/10 | 3/5 | 15/20 | Nov 14, 2006 Bottle, as #10, shared with Hogtown Harry, Blankboy, and GregClow, courtesy of Harry. Interesting orange, malt, citrus, and hops in aroma - neat saison like aroma. Light gold, small white head. Taste - solid. Like a strong saison - so yeasty, hoppy, orange skin. Really nice and refreshing. Good and certainly different from this brewer, nice job, would gladly have again.
