Commercial Description:
The term “liquid bread” likely refers to this style of beer, as it traces its origins to German monks who made strong, full bodied brews to be consumed in place of solid food during Lent. Malt flavors shine in a Doppelbock, and hops take the back seat here. Our version makes use of Vienna and Bonlander Munich malts as the base, also incorporating Munich 20, Cara-Munich, Breiss Aromatic, and Chocolate malts for a hefty, toasty beer in flavor and aroma. Expect a deep amber color, a rich malty aroma, and a complex flavor that truly celebrates malted barley and it’s various forms. Look for plenty of biscuity and bready flavors, accented by caramelized sweetness, finishing smooth and mellow with hints of chocolate. Hops are used only for a counter to the malt sweetness. We used Tettenang hops for bitterness and Hallertau for flavor. No aroma hops were added. This beer was fermented on White Labs Southern German Lager yeast, which is richer in flavor and aromatics than our house lager yeast. Original Gravity: 18 Balling, Final Gravity 4.5 Balling. 24 IBUs (low hop bitterness and aroma)

2007 and before - 7% ABV

2008 - 8% ABV

22oz. This is kind of a confusing brew... It was pretty good out of the shoot but after being open for 15 minutes it seems to have gone flat. Initially I found some creamy notions in the nose, but after the 15 minutes it seems to have little to no nose. Body is mostly spice, a bit of caramel, and some copper on the finish. Another drain pour from Legend?

Deep brown body with a frothy beige head. Rich brown-butter aroma with diacetyl and cigar notes, plus some perfume. Has a faint, but foreboding raunchy element to it. Flavor is of well-caramelized toffee plus dark toasted bread crusts and subdued butter. Takes on a cheesy character after a few sips. Something isn’t quite right with this and unfortunately Legend has a knack for that.

Bottle. Dark brown in color. 1/4" head. Melon, stale cheese, dairy. Pucker-lips sweet and tangy. Cheese that is about to turn dominates nose and tongue impressions.

Bottle from Greenleafe Tavern. Deep brownish ruby pour with minimal off-white head. Aroma is heavy Wheaties, some tart cherry notes, and some yeasty spicy notes. Heavy malty flavor, with mild finishing hops, and some figgy cherry and sugary notes mid-palate, and indeed a mild peaty and rauchy note was noticed also, as has been noted before by others.

2007 bomber. Brown pour, clear, looks reddish amber when held to the light, with large foamy rootbeer like head. Very light malty aroma, breath deep with pepper notes. Smooth, with a slight bitter then malty flavorwith faint smoke or peatness to it.

Poured with a thick, creamy slightly tan head and a deep brown with reddish hues. Doesn’t smell like a heck of alot, slightly grainy, malty but very dismissable nose. Flavor is nice. Malty, slightly yeasty, with a high dose of candy. Finish is smooth with the yeasty flavor lasting a bit too long for my taste. All in all, average.
