Commercial Description:
The term “liquid bread” likely refers to this style of beer, as it traces its origins to German monks who made strong, full bodied brews to be consumed in place of solid food during Lent. Malt flavors shine in a Doppelbock, and hops take the back seat here. Our version makes use of Vienna and Bonlander Munich malts as the base, also incorporating Munich 20, Cara-Munich, Breiss Aromatic, and Chocolate malts for a hefty, toasty beer in flavor and aroma. Expect a deep amber color, a rich malty aroma, and a complex flavor that truly celebrates malted barley and it’s various forms. Look for plenty of biscuity and bready flavors, accented by caramelized sweetness, finishing smooth and mellow with hints of chocolate. Hops are used only for a counter to the malt sweetness. We used Tettenang hops for bitterness and Hallertau for flavor. No aroma hops were added. This beer was fermented on White Labs Southern German Lager yeast, which is richer in flavor and aromatics than our house lager yeast. Original Gravity: 18 Balling, Final Gravity 4.5 Balling. 24 IBUs (low hop bitterness and aroma)

Bottle. Pours a very dark amber with a full off white head. Great appearance. Beautiful aroma of bubblegum, almonds, with a touch of banana and a slight roasted note. Flavor is toasted bread, caramel with some roast and nutty flavors. A very slight off taste detected-maybe to caramelized or roasty. Med to full bodied, a very good beer overall.

Pours a rich dark brown with ruby hues, not a lot of head. Aroma is oddly vinous, with tones of other dark fruit, took me a minute to decide how I felt about it, but in the end I really enjoyed it. Flavor is fairly sweet with strong over tones of rich fruit: cherry, and raisin, with lighter tones of figs and raspberry. A fair amount of sweet caramel malt, some moderate doughieness, overly sweet, but a lot of nice complex flavors. Only vaguely reminiscent of any other dopplebock I have ever had, but some really nice complex fruit flavors that make this a really nice beer.

Sweet & spicy nose. Color is clear and not unlike a brightly polished penny. White head was nice, but it faded. Very smooth mouthfeel; heavy on the tongue. Richly malted and somewhat complex. Has a nice and toasty flavor. A little spicy, bitterly hopped, and only slightly alcoholic (7.7% ABV is masked unbelievably well). Some smoke flavors, maybe even a little peat-like sensation. Overall, a pretty darn good Doppelbock, even though it’s not my favorite style.

On tap at Green Leafe Cafe, Wmsburg, 4/2/06: Dark, dark red. Poofy head. Sugary caramel with just a hint of an alcohol base. Quite smooth.

Somewhat dark amber brown. Sweet malt aroma. Nicely balanced malt and hops. A very enjoyable beer, just not exceptional.

Deep clear amber/red with a thick off-white head. Aroma of caramel, bread, nuts, floral hops and a tinge of sourness and alcohol. Taste has notes of toffee, caramel, toffee, raisins/dark fruits, toasted malts, diacetyl/butteryness, floral hops and that ever-present Legend sourness. Pleasantly sweet and malty. Some light alcohol and hop bitterness detected in the finish. Medium smooth body with subtle carbonation. Not much lacing and good head retention. Very nice stuff.

Nose is full of doughy dusted malted milk balls and bread crust. Creamy and moderately thick, biting a little bit, with a coarse texture and granola and cereal grain flavor, light smoke and light charred oats. A decent doppelbock, better than I was expecting after seeing the previous ratings.
