Doesnt smell that great. Pours golden amber, no head. Skunky wheat, cereal notes, off putting sweetness and alcohol. Perhaps light citrus notes. Tastes rather hot. Touch sour, possibly quite old, citrus fruits, no hops, mild malts, very little spice... Dry, sweet, mild citrus, not refreshing, not in the wheat beer mold, more like Barbar wheat ale from belgium... I cant believe this was that much better fresh... Pour is a cloudy orange with no head. Aroma is at first lots of spice but some citrus fruit follows. Flavor is nice with some spice and candi sugar. Finish has some grain and wheat. Couleur pêche ambré au reflet orangé brun caramel. Il n’y a pas beaucoup de carbonation et très peu de mouse. Une odeur d’ail, de pêche, de malt, de caramel, de sucre de canne, de thym, d’herbes, de mandarine et de poivre blanc... Quelle odeur originale! Au palais c’est onctueux, l’alcool est bien présente sur les gencives et l’amertume est bien ressentie en plus d’être consistante et crémeuse. Goût d’ail, de poire, de malt et d’houblon avec une pointe d’acidité d’orange bien camouflée par l’épice principale, l’ail..... Une bière à laisser viellir pour en retirer toute ces particuliarité. Une bière n’a pas besoin dêtre compliqué, parfois une bonne symbiose a bien meilleur goût.
Ensuite, cette bière a accompagné un repas de truite cuit sur une planche de cèdre sur le BBQ avec du scotch,de la morille, du sucre brun, du gingembre, du poivre indonésien et.....Wow!!! quelle synergie enfin un petit moment de plénitude. Bref, j’adore

Poured slowly, you&rsquoll see a golden nectar with not much foam although the beer is quite fizzy. Deliciously sweet and fruity with delicate bitterness. Reminds me of the famous 2004 Unibroue... Keep it up, Les Trois Mousquetaires. You make great beers. 9-5-6-5-19 ADDED: And the 2009 batch is far less interesting, being much spicyer, sour, not very bitter, close from a disaster. I’ll try another one in a few months but the one I had yesterday was the biggest deception I had from this brewer. 5-4-5-3-12
