Redish in color it is a sweet flavor but no wine like headache or sourness. Man after a long hot day it is ideal. It’s tart like a sour candy, and sweet. Like fresh rasberries were crushed and added. A decent amount of carbonation. You just can’t top the color or this beer. Even the head is dark pink. Sampled on draft for the purpose of this rating the beer poured a vibrant beet red color with a medium sized pink head. The aroma was full and strong with tangy, tart and sweet berry. The acidity of this lambic beer blends perfectly with the raspberries. Magnificent but subtle citrus aroma, deep and clear rose colored body with a soft, smooth, pink head. Delicate, sweet tasting palate of raspberries with undertones of tart berry, elegant, sparkling clean natural taste. Slightly sour, mouthwatering finish. This is probably not the best beer for typical social gatherings. However, it lends itself very well for: Chocolate desserts (especially chocolate decadence), fresh raspberries, ice cream with a raspberry demi-glaze sauce, sorbet, vinaigrette, crème caramel, baked Alaska, Olympia oysters, caviar.
