At first, this seemed a little skunky, but I poured it too cold, so I let it warm before taking notes. Hints of skunk fade revealing a big tartness, lemon, mustard, vinegar, hay, and a bit of wood. A bit "horsey" but nothing too hardcore here; gentler than Cantillon for sure. Taste is puckeringly dry with some wood, lemon, vinegar, herbs and grass. Finishes very dry and funky with a bitter wood aftertaste. Well carbonated, but totally uncreamy and slick in texture and a bit thin. Pours darker than expected, a dark amber color, clear, with a dense, snow white head that lingers long. Aroma is hugely complex, with lots of musty character, some sourness, and very funky, with horse blanket and all you would expect from a true lambic. The flavor is equally complex, acetic and musty but with a balancing sweetness. Aftertaste is equally complex, leaving you wanting more. A great lambic for the true lambic fan.
