Light copper pour with a very lively white head that dissipates rather quickly. Aroma is tart with lots of wwody notes, cider, and fermented grapefruit. A leathery funk subsides into a fruity champagne note. Flavor is fruity and tart, though not to the same extent as one would find in the typical Cantillon. Some vinegar and brettanomyces complement the flavor, which develops into an extra-tart grapefruit reminiscence. Palate is refreshing and clean with prickling carbonation and a lingering sour quality that stays dry throughout. Re-rate: Hazy peachy amber with a lively white tight bubble-celled frothy head. That lingers nicely. Aroma is nectar fruit, sweaty leather, isovaleric acid, and a good deal of further funky brett notes. Flavor has further notes of peach, apricot, nectar fruit, horseblanket funk, farm, and some tart fruit acidity. Palate is medium bodied, highly effervescent, dry, and slippery.

750mL bottle. Pours a hazy gold with a small white head. Nose is funky, tart, a lot of green apples, some lemons, a bit of leather, cheesey and a bit of malt sweetness. Tartness in the middle range for gueze, but has little more sweetness lingering than usual. Bitter grapefruit rind, fruity sour middle. Puckering and dry, light body with some medium carbonation. Super drinkable. I think would be a very good intro to gueze.

375 ml bottle from Sam’s Wine (Clybourne location). Poured into a wider fluted glass. Pours a pale straw with bits of fiery gold, almost like applesauce, well hazed, well carbonated with moderate bright white bubbly head that settles to a decent film and laces pretty well. Aromas are apparent without even holding the glass up: a touch of cidery vinegar, bit of champagney dryness and character, with light funkiness, a touch sour and citrus driven. Initial is delicate on the palate, preaching some nice citrusy tartness, delicate carbonation, champagne dryness mixing with good light sourness, light funk, and fruitiness underneath of grapefruit, lemon, apple, and a faint delicate spice along with sourness and funk on the backend. Lightly bitter and decent sourness on this lighter bodied, but well flavored beer towards the finish. Sourness gives the mouth a good enough coating and grows as you get further into the bottle, almost like a wave. This is a champagne of beers. Nice.

750ml bottle. Pours hazy gold with a small off white head. Smells a little skunky, some hard cider, and white wine. Tastes very sour, flavors of sour apple, light fruit, and some citrusy bitter grapefruit rind. Long sour aftertaste. Champaigne body. Not bad.

Pours a cloudy dark golden orange color with a thick foamy head. Funky tart aroma that is sweet, sour and vinuous at the same time with yeast and light crisp frruit notes. Sour and puckering with a nice amount of carbonation. Champagne-like with sweet crisp light fruits (apple, pear and grape) and a very dry sour finish. Acidic.
