Aroma of cherries, sour apple, and wet wood. Complex flavors include oak, horse blanket,some sour cherry and lots of other stuff like maybe some cedar and tobacco. Light mouthfeel with some sourness, well carbonated. Thanks Immy for sharing such a special beer.
Dedollewaitor (2354), Odense, Denmark Dec 28, 2008 75cl bottle at D.H De Liedekercke. 2000 vintage. No label. Clear amber with a small bubbly head. Nose is sweet, old, sour, matured, wood and fruity. Wow. Smooth, mellow, slight tart, crisp and dry taste. A bit dusty and medium to low carbonation. Good drinkability. Lovely. Papsoe (11421), Frederiksberg, Denmark Nov 19, 2008 (Bottle 75 cl) Comes as "Lindemans Lambic 1996" at 6% ABV, bottle # 787/1042 at Monks in Stockholm. First pour is clear amber golden with a tiny rough head. Aroma has a little cork but is otherwise rather tart and vinegarish. Light body, flat with some fruity raspberry sweetness and an astringent, tart finish with some fustyness. Never Cantillon sour though. 011108 KimJohansen (5208), Copenhagen V, Denmark Sep 22, 2008 Cloudy golden with no head. Sour aroma with barnyard, horseblanket and woody notes. Sour flavour with with apple, wood, horseblanket and citric notes. Ends sour. Lovely. Gold light amber in colour, crystal clear, there is a softened sharpness some lemon torte an aged slight musiness, some sour grapeskin, ooohh this is very nice. Excellent nose - Sweet, tart, barnyardy - wet wood, sweat, wet hay, lemon - WOW! Lots going on here! Flavor is all of the above, and DRY. Sour and fleshy fruits add to the mix. Wisps of carbonation. Awesome. Who do I have to shoot to get more of this???
