Commercial Description:
Named after the 6th sense, Umame is a hybrid ale with 2 different yeast strains and 40 % wheat. Barrel ageing gives it a sour counterpoint to the malt sweetness.

On tap in a snifter. Dried fruit (plum? apricot?) overtaking sweet malty aroma. Opaque caramel color with white ring around the glass. Medium-heavy sweetness overpowered by very heavy sourness. Cidery on the palate with a light texture and carbonation. Long and predominant sour and sharp finish. I enjoyed this thoroughly, although may be too boozy for some.

Tap at brewery, snifter: Clean beautiful coppery hue with a small but lasting frothy head and spotty lacework. The aroma has notes of apricot and apple esters, some jelly beans and bubblegum notes, phenolic and alcoholic vapours, touch of ginger snaps, red wheat, oak, vanilla, and a dash of lactic acid aromas. The taste starts fruity and boozy but not cloying due to a surpringly tart acidic wine like undertone. Tannic and roasty around the edges with a light clove and juniper spice note upon the finish. The mouth feels oily and smooth with a very warming sensation while drinking, A touch astrengent and dry as well. A powerful sipping brew not for the light of palates, as Rachel Ray would say... DELISH!

On tap. Pours copper with a low-lying off-white head. sweet malt base is nicely complimented by some slight funky sourness. some apricot, honey, and spices. herbal hop bitterness. favorite beer of the night.
