Commercial Description:
It’s an unassuming road leading to the priory. Here, off the corner of two intersecting roads, dedicated monks have been making beer for over 150 years. It’s always been a simple life – the kind that requires they brew only enough to sustain the activities of their monastery In the silence of passing seasons, they pray, they brew and retire in a solitary existence behind the sheltering walls. They live a most interesting life. Most likely one we wouldn’t sustain. Nearby, each summer, the trellised fields spring to life as rows of resinous green cones are trained toward the heavens. Rumor is some monks love these hops and being surrounded by budding yellow aromas and the leafy pungent fields inspires them. Since we weren’t sensible enough to locate our brewery near hop fields, we can only offer this blond ale in celebration of our Abbey brethren and their steadfast Devotion.

Described by Tomme as a Belgian blonde ale, this light yellow beer sported a tiny offwhite head. The Aroma was herbal and hoppy, with some underlying light sweetness and some yeast. Flavor is slightly bitter with some ballancing sweetness and floral hop character. Refreshing and flavorful, one of the best takes on the style Ive had to date.

Hazy yellowish beer with a small white head. Aroma is quite hoppy for the style- the dry hopping really shows through here. Excellent take on the style- almost like an american pale ale with a huge belgian yeast twist. Lots of bitterness with some sweet malt and floral bitterness. Palate is medium to full with an effervescent mouthfeel and swet finish.

On tap at the Sinner’s and Saint’s party. Pours a clear gold with a thick foamy white head. Sharp aroma, of yeast, malt, grass, and lemon. Taste is crisp, of lemon, malt, and grass. Lingering crisp sharpness. Decent.

Bottle. Pours gold, with a white head. Aroma is yeast, honey, and some hops. Flavor is yeast, hops, honey, and citrus. Medium body. Decent, but nothing special.

Draft @ Falling Rock. Yeasty, grassy aroma with hints of honey - definitely the belgian yeast stands out in the nose. Flavor is really light and sparkly - totally unexpected - lemon and spicy floral notes hit the tongue and the finish has more of the earthy yeast. Interesting take and a well done one.

Tap at Vine Street Pub.
Pours a thin cheddar orange with an aroma of weak grass and ’tarded biscuit and hops. Flavor is well-rounded pilsner yeast, light biscuit, and a bready finish with orange bits. Average mouthfeel that is slightly sexy on the tongue. More of a pilsner than a Belgian, in my opinion.

Draft at Radio Maria in Champaign, IL. Pours a hazy gold orange with a white head. Faint aroma of Belgian esters and yeast. Lighter side of medium bodied with soft fine carbonation. Flavor of pale Beglian malts and clove, lemongrass, white pepper, and flower petals countered by a herbal bitterness. Semi dry and yeast finish. This could use some residual sweetness. Decent, but nothing I would go out of may for again.
