Commercial Description:
It’s an unassuming road leading to the priory. Here, off the corner of two intersecting roads, dedicated monks have been making beer for over 150 years. It’s always been a simple life – the kind that requires they brew only enough to sustain the activities of their monastery In the silence of passing seasons, they pray, they brew and retire in a solitary existence behind the sheltering walls. They live a most interesting life. Most likely one we wouldn’t sustain. Nearby, each summer, the trellised fields spring to life as rows of resinous green cones are trained toward the heavens. Rumor is some monks love these hops and being surrounded by budding yellow aromas and the leafy pungent fields inspires them. Since we weren’t sensible enough to locate our brewery near hop fields, we can only offer this blond ale in celebration of our Abbey brethren and their steadfast Devotion.

Bottle purchased at BevMo: Oceanside. Golden with a nice firm white head. Flowery yeast aroma is quite pleasing. A mix of floral and earthiness in the flavor. Crisp refreshing palate. Good solid beer.

Bottle. [Courtesy of Bierkönig, quality tasting @ Papsoe] Average frothy white head that mostly diminished. Good thick display of lacework. Cloudy yellow color. Aroma of flowers, citrus, grapefruit, caramel, grain, fruit, and pineapple. Full bodied with a dry alcoholic texture and an average carbonation. Moderated sweet and bitter flavor. Dry and bitter finish. 28-09-2007

Pours a clear golden hue with a lightly frothed white head. Aromas of citrus, flowers, a little grass, and light hop presence. Mouth feel is light bodied with flavors of apples, a hint of oak, subdued sweetness with a dry finish. Nice.

(Bottle 75 cl) Courtesy of Bierkönig. Hazy, pale golden with tiny impurities and a dense, off-white head leaving some laces. Lightly floral nose with a touch of citrus. Medium body with a very light malt base and a distinct, astringent bitterness. 280907

750ml bottle. Aroma: Light bready maltiness. orange and light pineapple. Spicy, herbal, and earthy hop notes with just a touch of floral. A bit of cinnamon and honey. Appearance: Deep amber gold in color and slightly hazed. Off-white head was full and foamy with good retention. Good lacing. Flavor: Light bread dough and wheat malt. Citrus (orange and lemons) and mango. Herbal and floral hoppiness with earthy and grassy notes into the finish. A peppery spiciness throughout. Bitterness is bold and refreshing. Dry finish. Palate: Medium bodied. Medium-high carbonation. Overall: A hoppy Belgian golden ale. It was tasty, but the spice and bitterness was a little harsh at times.

75cL Bottle, consumed 9/27/07. Slightly hazy amber, very nice rocky white foam, less than spectacular retention, very nice lacing. Aroma is a little bit of pear, with some musty yeast and hop notes. Flavor is bone dry, not in good way, over the top bitterness and not very much in the malt category at all. Borders on Saison Dupont in bitterness without all the complexity of said beer. Finish is long lasting bitterness and not much else. Was really looking forward to this, I feel let down.
