The aroma is sweet with notes of wood, brettanomyces, lemon, and a light acidity. The flavor is sweet and acidic with strong notes of citrus and brettanomyces, and medium notes of wood and grapefruit, leading to a dry tart finish. Medium body with lots of Brett, citrus and vinegar accents. Dry and tart finish. Very fresh aroma of foot, lemon, woody and a slight bit of cheesiness. Great sour character, but blended with a sweet finish. Brilliant balance. Foot, funk and lemon, but yet very clean. Near limitless complexity. You would never know this was American - this is serious lambic of the highest order. Acidic and yet smooth. Milky and acidic with a smooth orange fruity base flavour. Dry and acidic, smooth and woody. Tart finish with a lovely dry wooden note.
