Dark reddish brown color, pours a huge head. Oak, chocolate, mustard, caramel and a hint of raspberry in the aroma. Medium to full bodied. Had no problems popping the cork, everything went smooth as can be. Pours light gold in color with a very nice fluffy head. Plenty of tartness and sour tones in the taste. Besides the tartness, there’s a nice floral aspect to the beer as well. Light and carbonated in the mouthfeel. The Cuvee de Tomme is the dominant beer in this blend right now. Huge tart lactic nose. Strawberries and balsamic nose. Creamy, medium, lightly carbed nose. Sharp lemon and orange pith mid-palate, along with caramel, strawberry, and balsamic. Long tart finish. Thanks gentlemen!!! Cloudy dark caramel pour produces a beautiful eggshell head with ample carbonation. Aroma is sour cherry, lemon zest, horse blanket, and balsamic. Flavor has a bit more depth to it...with toffee, leather, molasses and freshly spliced vanilla bean adding to the tart brett influence. It (the brettanomyces) is definitely displaying its mojo. Got more Cuvee de Tomme out of this than either the Angel’s Share or Amazing Grace. Medium bodied which left me wanting more!!! Mouth-puckering, jaw-locking, eye-opening complexity. Incredible retention. The malty, earthy, acidic nose is a mingling of brown sugar, vanilla, lactic funk and oak. Medium to full-bodied with spritzy carbonation. The sweet, mildly tart flavor offers alcohol and caramel alongside lesser notes of chocolate and dark fruit. Mildly sweet, moderately tangy finish with a pinch of salt. Deep burgandy hinted orange, with tan head. Aroma is sugary, light cherry skins, spices / yeast. Flavor is the same, yeasty / spicy aftertaste. The tart cherries are nice, but are mostly shadowed by the other flavors.
