The other half or 1/4 is creamy due to the plentiful use of yeast. cork was easy to pull opt though with that said I can easily lift 150 pounds the carbonation felt completely natural- beer really should not have the carbonation of coke! The carbonation helps build the complex flavor of the beer. The flavors of the beer smelt like wheat -- no duh--, furthermore it smelt of citrus-- it seemed grapefruitish to me, due to the dryness. I like that this wit had had a touch of hops that was very mild, but added a kick that many wits are missing. The flavor was much richer than most wits; it tasted of vanilla bean. To me abbey has a tie with Avery for the best wit I have had-- I have only had American wits. A nice job from a brewery that choose to do what they want to do and not what the vocal clowns want them to do- there should be more breweries like them. ross (1709), weddington, South Carolina, USA

Pours out a yellowish orange color with a small white head. The cork was hard to pull out of this, and I had to pour it pretty agressively to get any kind of carbonation to show. Smell was fruity with a hint of honey and grapefruit, some oranges, and a wheat smell. Taste fruity and easy to drink. Little to no hops, no alcohol detected, very light carbonation. Aroma of coriander, spearmint and what to me smells like clover honey (though never having had grapefuit honey, maybe they taste similar). Strong clover honey flavor. Light coriander and sweet malt. Pours a hazy very light yellowish gold with a nice soapy dense white head. Aroma is spicy zesty, peppery, phenolic, with lemon, lemongrass and an orange hint- coriander like with orange zest. Flavor is doughy wheaty malts, bready, clean lemon lime soda, some soapy notes, and a soft wheat finish and some peppery spice. Slightly better than average wit. Straw color with a few bubbles adrift atop. Aromas of wheat, noble hops and touches of orange peel and cloves. Flavors of light citric peel and bubble gum. A little light yeast in the background. Dense fruity mealy raspberry aroma, harmonic and mild, though a bit meaty and strange. Dry-sweetish chalky fruity grassy taste with herbal raspberry notes. Chalky mouthfeel. Mid-bodied. Taste is very fruity with notes of lemon and maybe some grapefruit. Alittle clove and some bread on the back for the tounge. Not great, somewhat drinkable, but not great.
