Think that this was provided by the yeast and if perhaps something was beginning to go awry, it was doing so in a beautiful manner. I didn’t get the banana esters and such that I might have expected, but the malt was fine and I trly enjoyed this. Rasins for sure. The flavor and aroma are delicate yet dominating! There is a wonderful earthy complexity to this master opus. Notes of chocolate and toffee are candid at every encounter. Hints of brown sugar, banana and raisin are recessed by a yeasty breadyness… pumpernickel and damp bundled wheat… old burlap. A striking spicy finish of cracked black pepper and spruce logs find their way into the wrapping up. This beer is simply straightforward and satisfying from beginning to end!

Aroma of caramel malt, figs, wheat, corn flakes. Nice, complex aroma. Tastes caramel malty, with a firm, wheaty, fruity finish. Complex, dense, fruity palate, with some spices and cognac as it warms.
