Luscious opaque gold, full of floaty black bits of yeast, capped by a lasting cumulous cloud that laces a bit as it fades ever so slowly....big farmy-sour nose, overripe sunheated lemons and limes interacting with freshly cut pine boards, hibiscus and perfume, just gorgeous...the mouth feels honey stickiness and perhaps a touch of maple, pepper towards the end and cotton-candy...but strong alcohol is a bit overpowering at the end and keeps this just on the edge of greatness...overall, still, masterful, and probably my best of the fest. A rocky white head that tries to lace. Medium body with fluffy carbonation. Honeyed malt with lots of flavors: citrus, other fruit, herbs. A bit astringent despite a persistent sweetness. Opaque, yellow meringue-like body with low, fizzy, white head that recedes to partial cover. Candy-like maltiness to the fairly yeasty, alcohol saturated flavour with very agreeable herbal hop character and moderate finishing bitterness. The taste seemed more fruity and there was a trace of a lacto sourness too. -1 Flavor and -1 Overall.
Bottle, 2000 - Millennium Release and served in my Duval Snifter:
Greeted me with a lightly hazed golden hue topped by an everlasting frothy white head and good lace. The aroma has notes of earthy and dusty yeast esters playing along with light apricot and pear. Additionally the nose detected mild pepper and clove along with some remaining sugar candi but not a lot.
The taste starts with a dose of sweet malts and candi supported by ripened fruit followed by a mild spicy midesection. Throughout the the tasting there is the common yeast character often found in most Belgian Strongs. There was a bit of prickly bitterness by I think age as mellowed and dried it out. The palate is biting at first before a heavy serving of yeasty and woody dryness comes about. While the alcohol is there, again age seems to have mellowed it out as well, nicely warming.
I like it the more I consumed it, very tripel like and would be if brewed by monks. I really like how it aged out and it appears to just now be hitting on all fours. I have to find out how they got this past TSA Security. Pours a very cloudy, light orange brew with a thick white head. Lasts a while too. Aroma of lemon peel, sweet seeded fruit, citrus hops and a touch of vanilla. Taste is a good balance of sweetness and dry malt. Maybe a slight acidic but a crisp and full body finish. Sweet fruity aroma that smelled like candy. Flavor matched the aroma. Sweet and fruity. Semi-dry finish. Nice and warming but well hidden alcohol.
