Commercial Description:
Barking Duck is our interpretation of the little known and very diverse Belgian Farmhouse beers, traditionally made by farmers to feed their workers during summer and harvest; nutritious, safe to drink (the water wasn’t) and refreshing. Made before hops became commonplace in beer so other spices were used as flavouring. It was a time before commercial breweries so each beer was unique to the family farm that produced it. Barking Duck, produced in very limited quantities, combines wheat, oats & barley, two yeasts, three hops and a blend of spices including cassia bark. We thought that since we were playing around with some different spices that we might as well get some spicy characters from an unconventional blend of hops. The hops we’ve used are East Kent Goldings for bitterness; Czech Saaz for flavour & aroma and German Hallertauer for flavour & aroma. The key thing for us is balance so we’ve kept each of the components at a low enough level so that nothing dominates but taken as a whole it’s a pretty complex beer. Although we went non traditional in the recipe, we did stay with tradition on the filtration. We didn’t do any! It’s unfiltered and unpasteurised. As a result, you might notice that the beer is a bit cloudy. That cloudiness comes from the live yeast cells left behind in the beer. Look closely and you might see a bit of funny business going on. There are two kinds of yeast in there. So Barking Duck is complex and refreshing, very fruity in aroma and flavour with mild tartness and a medium bitterness. It has a pale golden amber colour due to the blend of malted wheat and barley.

Pale yellow with lots of fine carbonation providing a big loose fluffy white head. Sour lemon aroma, reminding me off the 3 Boys Wit. Tastes like shampoo - the trendy stuff with all the flowers and spice and girly stuff. A dry, strange sourness hits the tongue: is cassia related to cinnamon? (Answer: Yes - thank you wikipedia). Feels like it’s expanding in my stomach. the spice is way over the top, and so is the carbonation. Even shared between two this still ended up a drainpour.

Good head decent carbonation lemon coloured ale,fruity aroma,lemon peel,wheat.Flavour soapy,tart,bitter not like the aroma,lemon strong,marmalade,some acidity flavour,bitter is off putting.Some will like it.Finish bitter tart.

Went in very blind on this one as I didn’t know the beer was styled as a saison at the time. Very wit in apperance; light lemon gold, thin / nothing happening head. Citrus and lemon noise, faint, with some underlying spice. Very very similar to taste. More lemon and spice, and the lemon is very overt for the style. Nice balance on the finish with medium strength spices.

light body, thin feel, lively carbonation , not a long lasting head. light straw in colour. the nose is instantly recognisable as a belgium beer. spicy but not peppery. acidic finish with strong wheat malt flavours. not bad,not great, an un complex attempt at the style.

750ml bottle - Bright pale yellow white, full puffy head. Nose pongs, almost sulphur but dominated by citrus. High carbonation, spices and that biting acidic finish. Good effort at probably a difficult style to achieve.
