Aroma was definitely apricot, but not over-powering, with a little tartness as well. Flavor again was very much apricot, but not sickenly sweet or over-powering. Aroma is strong sweetness, very cidery. The fruit starts to come thru more after it sits a few minutes. Very sweet upfront, yet finishes very dry with a strong tartness. The finish actually taste like apricot, but I couldn’t have called it out if I wasn’t told they were in there. I would have thought it was a bit of natural sourness from the spontaneous fermentation. Overall, similar to an apple cider, but with more tartness and a bit more complexity.
